ONE
Happy 1st Birthday, Esther!
This past year has been the best year of my life. Esther, you bring so much joy to our lives. You are the sweetest, loudest, most fun, cutest, strongest, most adorable girl ever. You are such a bright spot! You are always so happy and cheerful. You never get your feelings hurt, and you hardly ever cry. You have a sweet sweet spirit and I am loving watching you grow.
You are eating good these days. Your favorites are pretty much the same things: oatmeal, blueberries, strawberries, lasagna, baked potato, french fries, yogurt, crackers. You go to bed now without a bottle, and you sleep from 7:30-7:30. You love your bath, and after you get out you give me and daddy a million kisses each. It is the sweetest thing. You know how old you are, whenever someone asks you hold up one finger and smile. Your little sister is almost here and I know you are going to be the best big sister in the world! I can't wait to watch you two together.
My prayer for you is that you grow to be strong in your faith. To love the Lord with all your heart, soul, and mind (Matthew 22:37). To seek after Him and to honor Him. He created you so special and I am so grateful to be your mom.
Your daddy and I are so very proud of you and we cannot wait to see what this next year has in store! We love you!

my little indian
Last friday was our last Tiny Tots and Tunes class and everyone wore their halloween costumes. It was so fun to see everyones outfits, but of course I thought Esther was the cutest! =)
I know there is way to many pictures of basically the same thing but I just couldn't help it!

muffins or cupcakes?
Today I tried a recipe I have been seeing EVERYWHERE on the internet lately. It is so easy I knew it wouldn't work but I just had to try it. All it is is one can of pumpkin puree and one box of cake mix. No eggs, no butter, no milk, nothing just those two ingredients mixed together.
they look pretty don't they? and they smelled even better! but something about them just didn't work. they were spongy and waaaaay to moist. i tried them plain and with some cream cheese frosting. still gross.
on another note, dinner tonight was stuffed red bell peppers and those turned out to be good!
served with a salad and there ya go. recipe here.

tortellini soup
Tonight for dinner I made a tortellini soup and it was pretty good! surprised? I am. I did not want to cook this soup because hot weather and hot soup don't mix well. I am glad I did though- it was easy and good! Pravin says he enjoyed it too. I will definitely be making this again!
serves 4
-1 tbsp olive oil
-1/2 cup chopped onion
-2 cloves garlic, minced
-1/2 tsp dried oregano
-1 (15oz) can diced tomatoes
-4 cups low sodium chicken or vegetable broth- i used chicken
-9 oz, tortellini, any variety (fresh or frozen) - I used a fresh 3 cheese tortellini, and I had a 20oz. package and used more than half.
-3 cups fresh baby spinach
-grated parmesan
In a large pot, heat oil over medium heat. Add onion and cook until beginning to soften, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Mix in oregano and diced tomatoes. Add broth to the pot and bring to a boil. Then add the tortellini and cook according to package directions. A minute before pasta is done, add in the spinach and remove from heat. Serve with grated parmesan. Don't forget the toasted parmesan bread! Yum!

win win
Last night we went to eat at Ruggles Green in city center. We are to the point where we can't take Esther out to eat anymore because she wants to move around and go. City center has a big lawn area in the middle of some restaurants so it was the best of both worlds- we got to eat yummy dinner and Esther got to run and play while we ate. There were plenty of kids playing ball, water fountains, and much more to keep her entertained. We will definitely be going back soon!
sorry for the picture quality- i only had my iphone.
